The Sitges Carnival includes fireworks after the election of the carnival King and carnival Queen and the traditional finale.

The traditional finale is a Spanish ceremony celebrating the end of carnival marked by enterrament de la sardina (sardine's funeral), where the giant Sardine statue is burned  and buried at the beach as a symbol of the end of the good times. This custom is well-known in different countries as well, but Sitges adds its own style and version to this carnival tradition.

In Barcelona the people dress up and organise parties for all the week but particularly on the weekend.  On Thursday is celebrated Dijous Gras, also called 'the omelette day' (el dia de la truita), coques (de llardons, butifarra d'ou, butifarra) and omelettes are eaten. Parties end by burning Mr. Carnestoltes and with enterrament de la sardina (sardine's funeral).
